Au Gratin Potatoes

There is nothing I love better as a side than cheese & cream & potatoes.  I've found several phenomenal recipes for au gratin potatoes and perfected them (since Kyle always requests them) but I unfortunately thought those days were over once WW started, seeing as they are loaded up with heavy cream, and heavy cream, and heavy cream... oh and cheese too. HOWEVER thank you WW for providing a substitute AND a delicious one at that!

Here is my adaptation of the WW au gratin potatoes!

What you need:
-2 lbs Florida Butter potatoes
-1 tbsp butter (salted)
-Onion Powder (1 tbsp)
-2 tbsp all purpose flour
-2 cups fat free skim milk
-1 cup low fat shredded cheddar cheese
-1/4 cup low fat shredded swiss cheese
-1 tsp salt
-1 tsp black pepper

How to:
Preheat oven to 375 degrees.  Coat a 2 qt oven safe baking dish with cooking spray.

Meanwhile, wash & cut potatoes into thin slices.

In a large saucepan, heat butter & onion powder.  Stir in flour and slowly add the milk and whisk together.  Add the potatoes and stir.  Let simmer for approx 5 minutes.  Stir in 3/4 cup of cheddar cheese & all swiss cheese.

Pour the mixture in the baking dish.  Bake uncovered for approx. 45 minutes in the middle of the oven.  Cover, and bake for another 15 minutes.  Uncover & add remaining cheese to the top.  Broil for approx. 5 minutes (or until melted & browning).

Cut into 8 servings.

WW Friends: This beautiful creation is yields 4 points plus per 1 serving.  They are SO YUMMY and SO SATISFYING.  This is one of my favorite WW sides so far!
